This is probably a really dum question but how do you get an even layer of icing all around the cake? Would n't it be easy to put more icing on a side without even noticing??? Is the icing you buy at the hobby store good or making it by scratch at home better?
There are articles about 'smooth buttercream' in the articles section. As for icing, it is totally a matter of personal taste and what your area clients are used to eating. The hobby store icing may be ok for you, or you may prefer making your own from one of the many recipes here in the recipe section.
You will need to try a few to find one you like.
I was using the viva paper towel method until I tried Melvira's roller method and now that's the only way I smooth my icing. Look for a post titled "I share because I care" and Melvira explains how she uses a dense foam roller to smooth BC. It works like a charm if you get the right roller and us crusting BC. What are you using to apply your frosting so you have an even layer?
I say definitely start with the large icer tip as well. It does put a thick layer on, but as you smooth some frosting comes off as well. I love it. I also just used the roller for the first time!! Loved it. Works great after using the icer tip and smooth. The roller gives a matte finish.
