Royal Icing Help!!!

Okay, so the first time I tried making Royal icing it was a JOKE!!! Powder sugar all over the room!!!! I just don't understand AT ALL how only 6 tbls of water is supposed to disolve 4 cups of poweder sugar and a bit of meruenge powder. Its just not possible. How do you make your royal icing and how on earth do u make it work??? icon_sad.gif

start the mixer very slowly. You can also cover it with a clean towel to catch some of the sugar, but it does work. Powdered sugar will dissolve significantly in very small amounts liquid.

What recipe are you using?

(If you're using the recipe I posted.....it's 6 OUNCES of water, not 6 tablespoons. icon_sad.gif )

Oh, no it wasn't your recipe! I assume yours is the same only 6oz of water instead? I will try your method and hope it will work!

antonia74's royal icing is really easy even I can do it, I add the powder sugar a little bit at a time and I use a timer once the minutes are up the icing is ready and in thick consistency on her recipe it says to add more water of you need it thinner

Thank you!! Just one question though....the recipe calls for a paddle on the mixer.....I just have a hand mixer. Does this cause a problem with the mixing or texture??

Hi,
I have only made royal icing using a hand mixer icon_lol.gif I use 5-6 Tbsps tap-warm water also, plus 3 Tbsp M. powder. I mix it on medium for about 10-11 minutes or until it's not shiny anymore.
I had an instructor that told me it was easier to use my KA and to double the batch.

I've never tried I only have a sunbeam with regular beater no paddle still don't know the difference

Royal icing isn't actually hard to mix by hand. Add the powder a bit at a time mixing well between each addition until you get the correct consistency. you don't have to mix for 10 minutes after all the powder is added.
