hi i am new to baking. i have read that freezing cakes a day before and then thawing them makes them moist. well i froze a sacher totre, but on thawing it was tough. it was tasty , but the melt in your mouth feel was missing. it was perfect before being fozen. i did not freeze it in a plastic bag. what went wrong? icon_cry.gif

I might be able to help if you could tell me what a sacher totre is! icon_redface.gif

Sometimes the consistency of a cake can be affected by freezing. Since most of the cakes I make are from mixes, I've never experienced a negative result personally.

What did you freeze it in? I wrap mine in saran wrap (a couple of layers) while still warm, a layer of foil then place in a plastic bag and tie the bag shut. To thaw I remove the foil but leave the saran wrap on. HTH

a sacher torte is like a big chocolate truffle type thing..and I don't think it does well with freezing..
