Anyone Else Overworked For The Holidays?

I got a bunch of last minute orders this week. I don't even advertise or promote my baking....it's just kinda snowballing. Egads! What would happen if I tried?????? Not bragging....I'm sure that many of you are in this boat. It makes me scared to keep doing all of this....I don't want to fail.

I made 170 baggies of sugar cookies (4 cookies to a bag) and 2 Pig Pickin cakes this week. I was up until 3:30am on Tuesday and then 1:15am last night. And I have a regular Fulltime job, too! I'm SOOOOOOOOOOOOOOOOOOOOOO exhausted! But, I made some extra cash for the holidays, so it was worth it.

Anyone else? Share with us your crazy baking schedule this week! I'm certain that I'm not alone!

Happy baking and hope you treat yourself to a well deserved rest over the holidays. I don't sell cookies but I make cookies and cookie bouquets to give to friends and family. Was really busy last week but it is all finished now and I can relax.

I'm not that bad, but I went from having 2 cakes for December to having one I finished for yesterday, another one for Saturday, one for the tuesday after Christmas and now one for new years day. Just a slight increase. I don't do any advertising or searching for business either, so it makes me pretty happy or proud.

I had quite a few orders due at work last Thurs and Fri because I was going on vacation. The rest of the order will be picked up but I'm not really swamped like I was for Thanksgiving. Since I'm on vacation I can get my orders done any time of the day. The cakeballs are already made and in the freezer so all I have to do is dip. I do have a project due tomorrow for a mardi gras birthday. I already made the masks and decorated them I am baking the cakes right now. 11x15 sheet 1/2 van and 1/2 choc. I am baking them separate because they are 2 diff cakes baked at diff times. I will bake in layers and cut in 1/2.
The rest of my orders are pretty easy. I did have 2 people that were going to put the poundcakes in the freezer till xmas ask for another because they ate the first one! LOL

Heck yeah! I have 3 wedding and 2 grooms cakes to do in the next couple of weeks. and this month I've already done several cakes. I raised my prices just so they would slow down. I gave some leftover cake to the neighbors the other day and I had a dream that they said it was nasty and dry. I woke up clutching my chest. I've been making batches of marshmallow fondant for the last few hours and I'm exhausted. despite all the stress I'm really excited to be doing them.

3 dozen cake balls ... cake baked
1 12x18 birthday cake, done ..
1 coconut cake ,
1chocolate cake, ......done...
1 carrot cake, .....done. ......
1 turkey cake,..... baked ....
1 pic cake, .....baked.....
12 mini apple pie tarts
1 6 inch i love u cake... ....baked...

last week was pretty busy also...
Im taking a week off in Jan

and I would have had more, but i turned down some orders.....going to see will smith new movie 2morrow nite "prusuit of happiness"

I only took 2 orders this month - one the first week and one the second - turned everything else down because I had personal gifts that Iwanted to bake and I wanted to bake and decorate with my kids. I was afraid if I didn't turn the business away I wouldn't want to do this with my kids.

Oh, heck yeah! In addition to what was done the first 2 weeks, yesterday I delivered a present cake, today I deliver a cake, next weekend I have 3 cakes due: two birthday (complex) and one small wedding with snowflakes. Then I've got about 14 dozen cookies due Jan 3!

Next year I'm taking the last 2 weeks of the year off.

I have a customer that LOVES these!

Here's my recipe:
1 DH White Cake Mix
11 oz. Mandarin Oranges WITH the juice
1/2 cup vegetable oil
4 eggs

Mix together for about 2 minutes, but don't overbeat. The mandarin oranges will get all broken up...that's okay.

Bake about 20-35 minutes at 325-350 depending on your oven.

Frosting:
8 oz. Cool Whip
20 oz. can Crushed Pineapple (drained)
1 small pkg. Vanilla Instant Pudding

Mix together the Pineapple and pudding and then fold the cool whip into it. Then frost the cake as you normally would.

WARNING: This cake is addictive. It's not very Christmassy and I've already filled an order for 2 and have 2 more to do!!

I had a 4-day catering event: breakfast lunch and dinner for 80 Frat Presidents at a seminar. that was last week. I have 2 weddings on the 30th.....one is catering only and one is catering, cake, appetizers and choc fountains. Then I do the 4-day Frat thing again the first weekend in Jan PLUS a wedding on that Saturday. A week later I have the Frat thing with another organization, but it's only a couple of days.

I have nothing between now and the 30th, except cookies for my family. Thank heavens!!!

Sounds as if we are all a bit over worked and under appreciated this time of year! I work as a Baker/Bakery Manager at a small upscale coffee house/cafe' in Ohio and things have been CRAZY!!! Put out 165 cookie boxes (each with 2 doz cookies - part iced and decorated sugar cookies), lost track after I decorated about 1000 sugar cookies! icon_cry.gif Put together gift baskets, made Challah bread, hearty white, wheat, etc... more sugar cookies, regular cookies, and WAY TOO MANY bagel trays... we make all our bread and bagels from scratch... Thankfully I have a wonderful staff to help. Oh, did I mention the sugar cookies!?!? --- thankfully we get a little rest for a week or two, then the valentine cookies start!! Baked and cooked most of yesterday afternoon- made biscotti, truffles, and chocolate bark... made a birthday cake earlier in the month for my great niece/god daughter, have two more birthday cakes to make (one in January and one in February), and my first wedding cake in February! Plus my boss wants us (her and I) to enter a cake decorating contest in February!!! Will it ever end?! Guess it is a good thing that I LOVE what I do, huh? Well, my blessings go out to all of the over worked this holiday season, and the rest of the year as well!

Wow. Y'all are seriously mowed under, too. I had 18 orders this past week. Those included 4 cookies/candies/treats trays with like 120 pieces each. Cupcakes for the boy's school party. Cake for church last Sunday. Cabin orders, cheesecakes.

I actually had like 24 hours off. I was feelin' pretty good about having a day off, and was out finishing up the "last minute" types of things for Christmas. Phone rang in Wal-Mart. "Hello?"

"I know it's reaaally late notice, but---Is there any way you could make me a carrot cake cheesecake, a chocolate chip cheesecake and a coconut cake? Oh. And I need them by tomorrow, please."

"Sure. I'll have them to you by 5:00. How's that? Oh. The price? Yeah. That'll be $200. Since it's 'reeeealllly late notice' and all." icon_twisted.gif
