Some Advice Needed!

o.k. so i have 10 cake orders booked for this week and maybe more coming for also for this week. i always get orders on mon. thru wed. everyone on base knows that i am leaving and i am getting orders coming out of my ears.
for those of you who do a lot of cakes during the week do you have any tips for me? i have a 3-tiered cake, 2 3D haunted houses, a few round and sheet cakes as of today. i don't mind the many orders...i like being busy. i just want to be organized and not pull my hair out!

well, i don't know if this helps but here is what i do when i have busy week coming up -

make icing ahead of time. sometimes i go ahead and make a few colors i need and bag them.

go ahead and attach my couples to my bags

make any fondant or gumpaste decorations and let sit

cover all my cake boards



i will ususally spend 1-2 days doing nothing but baking and then decorate. i basically do anything i can to help keep the mess down and me a little less frazzled.

I do wedding cakes for a living..My icing gets done at the beginning of the week..
You can color your icing ahead of time and have the bags ready..and boards covered
any dry decorations i do monday ..
bake cakes on tuesday...wrap in plastic and refrigerated.. You can start filling some of our cake on wednesday and crumbcoated depending of the days of pick up..after crumbcoat cover them on plastic so they dont sweat..then thursday i start second coating and stacking..Usually by friday I decorate and finish them..

Hmm...depending on the day they are due. bake a few days ahead...put in fridge or freeze. Make icing while cakes are baking.....wrap cake boards and stack. If two or 3 are due on like a Saturday I would start on Wed. Get all my baking done on Wed. wrap well and refrigerate or freeze. Make icing later on in the day. Take cakes out Thursday night so they are thawed by Friday. Crumbcoat all cakes Friday morning....and ice. That gives you all day on Friday to do the decorating.

Make the frosting ahead of time. Figure out all the colors you need and make all the colors and bag them with couplers and the appropriate tips. If you don't have enough tips, put a piece of plastic wrap over the coupler then put the ring on it. Having all the colors ready is a huge time saver.
