Cheesecake Help!!!!

I am wanting to make some mini cheesecakes for my mother as a xmas gift. I know i shouldnt have a problem finding a recipe there are so many out there my problem is I want her to be able to keep them frozen and take them out as needed. Are there any special hints I need on keeping them frozen and not freezer burnt or can i simple wrap each one in SaraN wrap? If anyone has any suggestions on my freezer issue please help I only have a few days left. usaribbon.gif

when we make them at school, we make individual ones in a domed silicone mat, put them in the freezer with a plastic bag over the whole tray and they are fine for atleast a week i know...i think longer..

If you make them in ramekins they will keep cold longer, and cover them in plastic wrap.

When I have frozen cheesecakes, I freeze them in the individual containers covered with wax paper and then saran wrap. For some reason, the wax paper seems to keep them from drying out. Hope this helps.
