Hello, everyone.

This is actually my first time making a sheet cake for a customer, and they requested my snowman cake, but in a sheetcake for 40 guests.

I am planning on baking 2 cakes and putting filling between them to get the height I need, but I checked out the serving guide and it says around 70 for that pan. I know Wilton is stingy with servings, but I would hate to make a cake that size if I could go with the next size lower.

Any sheet cake experts out there that have some thoughts? A local baker said that they consider that their 1/2 sheet and it serves closer to 45.

Thoughts? Suggestions? Is this the right pan for 40 servings or am I just making WAY too much cake for this customer?

I would use the 11x15 sheet pan. That gives them a nice serving size and not too much cake left over if any.

I agree....an 11x15 would be perfect for 40!
