Hi fellow CC'ers,
I got an order for a cupcake cake for some kindergartener's.. I've never done a cupcake cake before. Can you please tell me how I go about doing this.
eg .. how full do i have to fill the cups? how do you get them flat ? etc. all the info will be greatly appreciated.

I use an ice-cream scoop (the kind with the metal bar that sweeps the bowl of the scoop) to measure exactly the same amount of batter into each cup - works like a charm! If any bake up into peaks above the cup rims, just trim with a knife so they are level with the top of the lining paper. I use stiff buttercream to decorate mine - you don't get the problem of the buttercream falling in any gaps that way. Use crusting buttercream and smooth as you would a normal cake. Good luck!

you should do a test run. i've heard that using a cookie scoop to measure your batter is a good way to get all consistant size domes on your cupcakes. sometimes when mine get pointy peaks, i lay a clean towel over them and then put a book on top (while they are still in the pan ). Make sure to put a dallop of icing under each one to make sure they don't shift. Hope this helps.

I did my first one this weekend & it was pretty easy it's the Santa CCC in my pic.
Little tip, I also use the ice cream scoop & measure each one, however mine did still dome while cooking, so as soon as the Cupcakes came out of the oven, I put a cookie tray top up them for a few minutes until the cooled down. Once cooled I removed the cookie sheet & voila flat cupcakes ![]()
I iced mine with IMBC...
the perfect size scoop for cupcakes is a #20 ice cream scoop. you can get them at restaurant supply stores. the #20 means you can get 20 scoops out of a quart of ice cream. you don't have to trim them or anything. you can get lots of different sizes. a #30 is a good cookie size. anyhoo, just putting in my two cents.
