If it is totally dry/crusted and still not smoothing then you probably will need to use the hot knife technique. Very lightly mist it w/hot water. While doing that soak your spatula/knife in boiling water. Shake off any water on the knife and run it over the misted icing.
It sounds like you've let your buttercream crust over, then tried to smooth it out. This is not usually possilbe. One trick I use when the normal methods of smoothing my cakes are not working is to sprays a bit of hot water from a spray bottle set to mist on my crusted buttercream. This will soften it enough to allow you to smooth it out. Also, I dip my knife or spatula (Metal) (that I am using to smooth my cake) in a cup of warm water and the moister and heat also helps me to smooth my cake. I would only suggest you do this on white or off white BC, not colored. It will possibly leave streaks on colored BC.
i smoothed it out as i usually do. about 5-10 minutes after icing. tried dipping in hot water- viva, spatula, roller. so i finally just used a printed napking. that worked...
even though there is a design in it now. hope the bride doesnt mind. i dont think she will though.
i will have to remember the spray bottle if it ever happens again. thanks so much you guys!
