How In The World Do You Make Giant Chocolate Curls?

Does anyone know how to make, or have ideas on how to make the giant chocolate curls on this cake? The rest of the cake looks really easy. Maybe not finding nice plump raspberries this time of year, but it seems pretty simple for the most part. And are the boards just covered with chocolate fondant? Thanks for you help!

Im not sure if this is somethingyou'd consider getting into, but you could dip frozen Pirouette Cookies, store bought or handmade, in chocolate and maybe get the same effect. I have one of those cheese wheels (cannot remember the name for the life of me right now) and I do order a round of chocolate from a place in San Francisco, but its costly and I dont really do it all that often. If I can rember the name of the thing...I'll let you know..

thedessertdiva... Is it the geriolla? Dont know how to spell it for sure ! But I also have one ! does it make those kind ? I thought it only did like the ruffle looking things ??? I just bought mine and havent tried it yet ! Any tips on using it ???

Thats it! I couldn't remember that name for the life of me! Now that I think of It, I dont think it make the curls like that on the featured cake...

The best tip I have for it, is to keep the chocolate chilled, not cold, but cool...it seems to shave much nice that way.
