Got a question for anyone who wouldn't mind answering. How long will buttercream icing stay fresh in the refrigerator? I use butter, hi ratio shortening etc. and no milk. Thanks so much.............

I keep it in the fridge for about 1 week. If you need to keep it longer you can freeze it.

It lasts forever! Well about a month. icon_smile.gif Some people might disagree with me. If it is kept in the refrigerator in a tupperware bowl or a tight sealed container it will keep~ Don't throw it away after 2 wks that's a waste IMHO icon_smile.gif I freeze my BCI too. It does last a long time that way. When your ready to use it let it thaw out in the refrigerator not on the counter top. It will be ruined for sure. So about 3 days before you need it stick it in the refrigerator to thaw. That's my 2 cents icon_smile.gif

Thanks so much to both of you. I wanted to make some up today for a cake and I thought that I may as well make up enough for a cake that I'm also doing next Saturday. Might as well do all that I need while I've got that mixer out... Thanks again!!!!!!

That's exactly when I freeze my icing butternut~ I always make tooo much for the next time I need to do a cake.

I just realized your from Hampton, VA~ My DH is AF & we were stationed at Langley AFB from 1988-1992. I absolutely loved that place! I've heard it is huge now. I especially loved York Town. Our DD was born there on the base. How's the weather? Any snow?

Oh, wow, small world. We live very close to Langley. Yes, it is huge. The weather here has been WARM. Today it is in the mid 60's and most of next week is going to be close to 70. Oh if it would only stay this way. Thanks again, ex-neighbor icon_smile.gif

It's warm here too~ In the high 70's. We have the a/c on right now. I wish it would get cold again! When I went grocery shopping last week I bought ingredients for gumbo, chili, stews & soups... now noone wants to eat those when it's warm outside

I have 2 dear friends that live in VA. One day I hope to go back.

That would be great. I'm sure that it's difficult when you move away and have to leave your buddies behind. It's funny that you should say that about the gumbo, etc. That is exactly what I was saying to my hubby yesterday. He wanted chili for dinner but it just wasn't the right whether for it. Sounds strange but with it being warm, it just doesn't taste the same icon_confused.gif

You got that right~ It isn't the same! It's gotta be cold outside for chili & many other stuff. We could eat some crackers but no chili LOL icon_smile.gif
