I am making a cake that will be eaten on Tuesday. It is a chocolate Kahula cake with a kahula moose filling. I am wondering if the cake would still be good if I make it on Sunday. Will the filling still be good by Tuesday....it will be refrigerated of course. Thanks Jen

The mousse may not hold up for three days. It probably wouldn't spoil, but it could deflate/melt and make a mess. have you tested the staying power of the mousse?

A cake will stay good in the fridge for over a week if it's not on a board that will "soak up" the moisture.

I don't think I would want to serve a cake that is already two to three days old. Why not make it and freeze it then decorate it on Monday

my post was suppose to say "NOT soak up the moisture"! Sorry!!!

I do much of my baking on Tuesday and Wednesday for Saturday pickups. When you have 10-15 cake orders per week the work has to be spaced out. Many of my cakes are decorated on Thursday for Saturday pick ups. I have many, many repeat customers who say my cakes are the best they've ever had so keeping them in the fridge a few days must not be too bad of an idea! icon_wink.gif

The recipie is...

1 package of instant pudding
1 cup milk
1 cup heavy whipping cream
2 tbsp of kahula

so i am not sure if it will hold up. Do you think it will?

Nope, it would not hold. The whipping cream will seperate.

I make fillings from heavy cream quite often and never had a problem with them holding up. I make a cream with whipping cream, sugar, and sour cream to top cheesecakes with and I keep it in the fridge up to a week. In this instance you should go with whatever you gut tells you. I think it will be fine...others don't. What do you think?? Let us know how it all turns out!! Good luck!
