the upside down icing technique for someone who's a novice at all of this? I really want the top of my cake to be super smooth, so writing on it will be easier, but I'm kinda nervous about trying this...how hard is it really?

Go for it. Just read the directions a couple times to make sure you understand the steps (I didn't quite grasp it at first!)

It helps to chill or freeze it really well. If you don't the worse that can happen is the icing sticks and you have to smooth it by hand, but it's still a lot easier.

It also doesn't work as well if you use a icing recipe without butter.

i consider myself a novice and i have tried this on a square no less. and it worked!!!!!! i say go for it its not hard at all. in fact i think it makes the whole icing prcess easier.

My only suggestion is to make sure your BC is really smooth. The last time I tried this technique, I didn't take the time to make the BC smooth and air bubble free, so after I lifted the paper off the top of the cake, there were some unsmooth areas.

I use this method all the time and really love the sharp corners that you can get. Have tried the paper towel method and I love this way also. I am getting use to making the designs from the decorative towels.

Go for it, you will love it once you get the hang of the up-side-down method.
