I can't believe this happened! I made a Caramel Apple Cream Cheese Cake today and mmmmmm it was looking so yummy... the anticipation of trying a taste was overwhelming! But I restrained myself...whew! icon_twisted.gif

As I was putting it in the fridge, I bumped it against the door and PLOP!!! down it fell onto the floor!!! icon_cry.gif

Now where is a dog when you need one? icon_confused.gif

So I am on my knees cleaning up the mess when my DBF comes in from work and sees me in a not so flatering posistion and has the nerve to ask....Whatcha cooking??!!!!

I had to picture how I must have looked and rolled on the floor laughing...oh well, what can ya do? Tomorrow is another day

Good for you that you can laugh at the disaster. I'm sure the second one will taste much better!

Sure...it is posted by JJ in the recipe forum but here it is:

1 (21oz) can apple pie filling (I made my own)
1 9 in graham cracker crust
2 (8 oz) pkgs cream cheese softened
1/2 C granulated sugar
1/4 tsp vanilla
2 eggs
1/4 C caramel ice cream topping
12 peacan halves
2/3 C chopped peacans ( I put NO nuts in it as I am allergic)

Preheat oven to 350. Reserve 3/4 C of apple filling and set aside.
Spoon remaining filling into pie crust. In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth and add eggs, mix well. Pour over apple filling in crust.
Bake at 350 for 35 minutes, or until center is set. Remove and allow to cool to room temp.
Mix reserved apple filling with caramel topping in a small saucepan. Heat for about 1 minute. Arrange apple slices around outside edge of cheesecake. Speard caramel sauce evenly over. Sprinkle and decorate with peacan pieces. Chill until ready to serve.

Homemade Apple Pie Filling:
1/3 to 1/2 C granulated sugar
2 TBSP corn starch
3/4 C water
1/8 tsp nutmeg
1/4 tsp cinnamon

In a microwave safe bowl. Microwave covered 5-6 minuted or until thick and apples are tender, stirring after each 2 minutes. Makes about 2 cups (same as 20 oz can) Cool and freeze if desired.

It was yummy (what I tasted of it lol)
