Shoud I Do This???? (Long)

I was at the grocery store and went to the cashier that I always go to. Had all of my baking stuff and she asked me what I was up to. Long story short....she and her friend have a catering business. Next week they move into their official business. I asked her about licensing and she went off on this long explanation. I told her I couldn't be license in my home etc. She then said----------don't worry. We'll get you licensed through our kitchen. Then said----you don't have to pay using our kitchen. We have been looking for someone that can decorate. I said-----
we would have to sit down and talk about an arrangement. Maybe a percentage of my cakes or I go so many cakes a month to pay for my time in the kitchen. She then said------don't worry about it. Just get started and get on your feet then we'll work something out. Now is when my CC friends come in.

Which way would you go??? A percentage or so many cakes or any other ideas. I will not do this unless we have an arrangement up front and an attorney has approved. I don't want anything free because that usually comes back and kicks me in the butt. So some ideas, opininons would really be great.

I would definitly want to get something in writing and a attorneys approval so you can cover all bases and not be surprised with some demands after the fact that they let you use the kitchen for free. Good luck and best wishes. Do you know the other lady that would be doing the catering?

I would take the risk for say, 60 days, with no agreement, no promises. then you might have a better idea of how much time you need/want, what kind of arrangement would work for your situation. You normally have to obtain your own license for your business, unless you work under their name (not a good idea). You may have to pay for your own inspection.

A percentage of sales might work, then you won't pay for time you don't use.

You need to know about equipment, storage, supplies, phone access, packaging, how much work space will you have if they are busy with a big job? Access after hours?
