I tried a recipe today that I pulled from Wilton.com. It's a margharita cupcake. The cake calls for the frozen lime margarhita mix. The cake is tangy. Husband says sour. http://www.cupcakefun.com/ideas/sf_margaritalime.cfm

The cream cheese key lime icing, suggested by Wilton, didn't pair nicely, in my opinion. I tried my standard buttercream, with a twist as follows:

1 cup butter
2 egg yolks
1 tsp fresh lime juice
3 tsp lemon zest
2 cups conf. sugar

My buttercream seemed a little better, but the cake is very tangy, to the point of tasting "dry" (because it's so sour). Almost like it gets stuck in your throat on the way down. It begs for a filling. I don't think anymore tangy flavors would do this cupcake justice. Do you have any suggestions for something slightly sweet that won't over power, but would provide a nice compliment to the sour? I think this cupcake has potential. Thanks

Thinking of the tartness of the orange on a creamsicle, why not plain old vanilla pudding? Or Bavarian cream...

Thinking more on the side of keylime pie, maybe something with a meringue feel or whip cream.

Good Luck
