Making Icing Ahead Of Time Question

I have been reading about making icing ahead of time(a day or two) and then everyone says to re-mix it before you are ready to use it. Does that mean hand mix/stir it, or does that mean to use an electric mixer for a minute or two?

Well, truthfully, the icing that I have had frozen and defrosted, I re-mix by hand. I just take my big spatula and mix it up.... I don't put it in the mixer... You don't really have to...

I like to re-mix in my blender if it's a large batch that's been in the fridge for a week or two. But that's my personal preference - it seems to smooth it up alot more than hand mixing. icon_smile.gif If it's a small batch for piping - i just beat the heck out of it by hand. Up to you icon_rolleyes.gif

Sometimes I make my icing a month in advance. I always mix it up in my kitchen aid before I use it. It is so much easier to work with. I mix it about 2 minutes on the 2nd level. That's when I add any extra water I need or color. I try not to stir if I don't have too!

ITA! Mixing it again in the KA does make it much easier to work with IMO. Its an easy step and makes the icing fluffy again.

Some of you say you freeze it, does it turn out okay when you defrost?

I have frozen it and have had no problems after defrosting and remixing.
