Limoncello Lemon Curd.....what Went Wrong????

I got the limoncello lemon curd recipe off this site and was really excited to use it, but after making it and letting it sit it never really got thick enough to use. I've never used or even had lemon curd so I'm not sure if it's supposed to be runny or not, but I was planning on using it as a filling and it was not possible at all since it was still liquid. I even let it set up in the fridge overnight plus some!! I reread the directions and followed everything to a tee. Any ideas on what went wrong???? Or does anyone have a good recipe for the future?? TIA!

The recipes I have used have thickened while it cooks, but it takes some time. i haven't tried it using Limoncello.

You could try cooking it more, and if that fails, you could thicken it with arrow root (or cornstarch but arrowroot is clear)

I make this all the time and it always comes out fine. Sorry that it is giving you trouble.. Could it be that you put it in a container that was reactive? Most likely not, but it's a thought. Did it cook in the pan until it was thick? It can take longer than 10 - 12 minutes to really come together. When it is done it should be thick and creamy..

I'd try cooking it a bit longer.. if not then you can always make a slurry of water and cornstarch and add that in.
