Hi all:
I am planning to make a cake this weekend for a birthday party, its for a friends boyfriend and she gave me green light to go wild on this,
They are not picky at all.

I am having doubts with the flavors for the filling.

This is the plan:
Its one single cake 12 X 18 with three 2 high layers.
It will be decorated like a tennis court because the b-day boy is a tennis pro.

The first layer is chocolate with a dash of hazelnut (coffematethanks CC for the brilliant idea!!!)
the second layer is brownie and the third layer is chocolate with nutmeg, also coffemate flavoring.

The cake will be busy itself so I dont want to overwhelm it more or ruin it with the wrong filling.
Do you have any ideas of what would go best?

You have so much going on in the flavors that I would keep the filling very plain. A light cocoa buttercream, or plain buttercream would complement all those flavors. If your cake has a lot of decorations, it can be heavy. You won't want a lot of filling to squish out.

I think JoAnn is right in keeping the filling more simple with plain buttercream. I also think a basic cream cheese filling would also compliment all the different flavors you have in the cakes.

I would go with the cream cheese filling.....a little bit of tang to cut through all the flavors, sounds good though! Good Luck!

I would use the light filling like what is in the giant ding dong cake. It will balance out all taht chocolate lol... sounds yummy!

I agree. I know a lot of people are unfamiliar with this but Mascarpone cheese is a great alternative to cream cheese. It is similar to cream cheese and is a classic soft Italian desert cheese. If you haven't tried it, you're missing out!

I agree with the plain filling - plus, if it's 3 12x18's stacked, think of how much easier it will be to make a plain filling than to make a fancy filling.

I LOVE chocolate I'd be tempted to slather some nutella up in there!!! (chocolate hazelnut spread found in the peanut butter aislse..yummmmmmmmyyyyyyy)
