How Long Do Dummy Cakes With Fondant Last Before Drying Out?

I am just starting in the cake business and was asked to have a booth in an upcoming Bridal Show. I am planning on have two wedding cakes. One done with fondant (very few people where I live have even seen fondant!) and one with buttercream. How far in advance can I make these cakes so that still look good in a month? Will the fondant dry out pretty fast in the winter in Illinois where it is very dry? You all have such great ideas and experience, I sure would appreciate your input. Thanks so much for all your help so far!

I did a demo cake for the local Michael's store that is still in pretty good shape. I did it in either July or August ... I covered it with Wilton fondant ... it would look a whole lot better if they'd leave it under the display case and stop taking the case to use for other things!

Do you make a lot of fondant cakes with the Wilton fondant? I am wondering about the taste. I personally do not like the taste and I am trying Satin Ice for my next client fondant cake.

I use the Wilton fondant for display cakes-saves time making fondant. I made several small display cakes over a year ago, and they look just the same as when they were new. I keep them in boxes or plastic bags to protect from dust.

Buttercream will last quite a while, but it is subject to damage. If you can afford perma-ice (in 50lb containers) the cake will last virtually forever.

I used the Wilton Fondant on my dummy cake last year. It was my last cake for Wilton, Course III. I have it in my china cabinet and it still looks great. The Wilton Fondant is great for stuff like that and making figures and such, but it's not much for eating. MHO

I have some display cakes I covered in fondant 8 years ago and they still look good they just need to be dusted occassionally. Also I live in a humid area. Would love to have them in a glass box, one day.
