Just wanting to know,.. since I've never made these before. I made the cake balls, actually I formed them into more square shapes and I'm going to dip and probably double dip to get a good coating of chocolate. (I did the vanilla caramel and I'm going to dip with white chocolate maybe some regular chocolate too for a variety - I haven't decided.) Can I decorate them with royal icing, ie holly, flowers, etc. decorations for Christmas? I'm hoping they'll look more like petite fours (spelling?) when I'm done.

Thoughts/Comments anyone?

Thanks!

I would make the decorations on waxed paper, let them dry completely, then put them on the cakes at the last minute. Cake balls should be refrigerated. The air trapped inside the chocolate shell can allow mold to form inside.

I've done that before. I had a bunch of little royal icing pumpkins left over, and popped them on top of some cake balls. Looked cute, held up just fine in the fridge!
