I have a butter cream recipie that uses this. what does it do and what would happen if I leave it out. Thanks

meringue powder is powdered eggwhites with stabilizer (cream of tartar)
This particular recipe will need either meringue powder or the same amount of powdered egg whites in order to hold up.

there a many other buttercream recipes that do not contain either.
