My bakery is being showcased in a local magazine for the holidays. They are looking for a baker who can make large gingerbread houses for which I volunteered for. I'm just wondering if you have suggestions for pricing these large displays?

Complicated question...how about a complicated answer?
It depends on whether you want to do a lot of these or not. you can price them 'fairly' or price them to sell (cheaper)
It takes a lot of gingerbread to make a large house.
Do you have time to bake lots of houses?
How about decorations, will you have to buy a lot of candy or will you use mostly icing
The only price comparison I have-Costo is selling complete kits for a small house for $10.
I know fresh baked can't compare, but will big expensive houses sell, and can you spend your pre-holiday time baking gingerbread and drowning in royal? Look at this cake from Dean & Deluca $175.00.

I'm thinking more on the lines of really large display Gingerbread Houses. Similar to the ones which are made for the Food Network contests.
I guess I will have to calculate my time for each house and multiply it by an hourly rate.
Any thoughts and suggestions are appreciated.

I'm doing them for $.50/sq. in.
So, a 24" x 20" house would cost $240, for example.
Unless they want a more elaborate design (like the one I'm doing for a competition) - then it's as much as $1 or $2 per sq. in.
To me, there's no money in doing the small, cheesy ones for cheap. They are very labor intensive if done with more than some gumdrops and royal icing... charge accordingly. ![]()
