Help!!! Coconut Cake?? Anyone??

Bride wants coconut cake... Does anyone have a suggestion for a great recipe or doctored cake mix (preffered) I did find at Walmart the Duncan Hines has a coconut flavored cake mix. And Icould really need ideas for filling.. my mind is drawing a blank on this. please help... I would really like to hear your suggestions..

You can add shredded coconut and extract to any cake recipe you already love.

There is a great coconut cake recipe in the Cake Book, and I think Martha Stewart has one in one of her cookbooks--probably Desserts...but they're both scratch and require coconut milk and/or flakes. There is also coconut extra you can add.

Don't forget chocolate for a filling choice, and maybe a rum soaking syrup wash...YUM!! Or coconut cream filling.

Or pineapple, for a tropical twist...

I just made a Wasc cake substituting the water for coconut milk and using coconut and rum flavoring. Tonight I made a Pina colada cake by doing the above but also adding crushed pineapple and pineapple juice. I haven't tried this one yet but it smells delicious!

Here is a great recipe that is pretty easy to make (it just takes a little time). For the icing, I took my regular buttercream adn substituted 1/2 of the milk with cream of coconut coffee creamer and used coconut extract in place of the almond extract! It was great!

Delights By E's Double Coconut Cake

DH coconut cake mix
4 eggs
pkg jello coconut instant pudding
1 tsp meringue powder
1/3 cup canola oil
1 c whole milk
1/2 c canned coconut milk (be sure to shake it because it might be separated)
1 tsp coconut extract
1 c unsweetened flake coconut which has been spun thru food processor so its ground fine

prepare as you would any doctored mix except the ground coconut gets added after the wet and dry are completely combined

I fill this with a key lime buttercream filling; a scratch version of this cake won Grand Champion at our county fair last year and 4th at the State Fair, and get a lot of requests for weddings.

I agree with gabbenmom, this recipe is AWESOME!!!
I had to make coconut cake for an order a few days ago and I tried this one (I only made the cake not the frosting) . It is very moist and very easy to work with. I do not even like coconut and I loved it. The customer told me it was a big hit at her party. Definitely worth the work!
