Where Should I Start?

Hello everyone,

I would like to have cake decorating as my bussines. But the thing is, I am not originaly from USA and my husband really dont know. Well the thing is, I want to be legal decorator and probably have own small bakery or so. I live in Los Angeles. Few months ago I started to take cake decorating classes in adult school, but I know this is not enough. If i will want my bakery, do I have to have pastry school? Or is it just possible to go and say, Hey I know decorate..., you know what I mean? Do I need some kind of certificate...of course I do. But which ones, with what should i start?
Can anybody help please?

If you have skills, bakeries don't often require certificates. Some will even train you.

Ask them, the worst that can happen is they say no. Maybe someone will say yes!

JaAnnB no no no, the thing is, I dont want to work in bakery. I dont like their style of work, at least here around, I would like to have my own. But I dont know where to start.
If i MUST have pastry school, If i must work somewhere before... I just dont know nothing, and last thing which I want is boss tapedshut.gif

Since I am just starting my own business, I first got my federal tax ID number. Then I got my state tax ID number. These can be done online.

Then I decided on a name for my business and applied for it. This can be done with the Secretary of the sate in which you live.

Then you find out from your Department of health the requirements for your facility and a food safety class.

After all that and you comply with it all, then you can apply for your business liscense. Check with your state to fins out what you need to do as each one has different requirements.

Your do not need any culinary degrees to open a shop or do it from your home. If you can bake and/or decorate with some skill then you can do what you want to do.

You need to check with your state and see if you can legally bake in your home or if you need to rent a kitchen to bake from and do all the things that MnSnow mentioned.

In California, you cannot sell baked goods from a home kitchen. You are required to work from a commercial kitchen. In some areas, you can find kitchens that are open part time that may be willing to rent.

Welcome Lidunka25,
I also am in L.A. You do not need a certificate in cake decorating or pastries to own a business.

First you will need to have a location, home kitchens are not permitted here. Next apply for your Fed ID number.

Go the the records departartment for los angeles (it is in the City of Norwalk) and file a DBA (Doing Business As) this will give you a business license that gives you the right to use whatever business name you choose. (It cannot be the same as anyone else)

Go the the State Board of Equalization (I believe they are still in Culver City) to apply for a resale permit. You will need this to buy at wholesale cost the materials you will need for your bakery and sell them as well.

Then apply to the city in which you want to do business for their license and last of all the health department.

A Food Science and Business Degree is going to help you far more than the culinary school will, which will help but only to a certain extent...

The reason, in order to be a successful BUSINESS you've got to know how to manage a business to make a profit. Enjoying decorating cakes is one thing, LOTS of people do, but to be able to earn your living from it is another. Handling the media, handling adversity, handling brides, etc. before hand is going to make a greater difference in your long-term success because this is a high dollar investment you're going to be making into all of the commercial equipment. Some of it is reasonable, but other things cost an arm and a leg.

The other thing is I really WOULD recommend taking a job working in a bakery for the sole purpose that you're going to learn production speed on someone else's nickel. Even if you plan to stick to more unique designs that people can't get at the local bakery, it's still important to know the little tricks that can cut your time in half which is the most expensive portion of making cakes.

From there, call your local health department and state's department of Agriculture who in most states is who licenses food businesses (remember, you most likely will be traveling out of the LA area for deliveries).. Also, the local building inspector, etc. to find out what all the regulations are.

One more question, if we build kitchen from garage, is it like homebaker (not alowed in CA) or its different coz its separate from house,have own entrance?

That will depend on how the laws for your state read. Here, as long as it isn't accessed by the household, it can be attached.

You'll find out as you explore all the avenues by going to your states website, the dept of ag. website and such and reading what is required and how the law reads. Please don't give up!
