Has anyone here ever frozen a cake which has already been iced and decorated? Is this not recommended? How did the thawing process work? I pretty much use only buttercream, although I'm tempted to try mmf.
My mom is coming for a visit this week and I'd like to make a cake for her to take back home with her for my brother's birthday next week.
Any experience with this would be helpful, and if it is a bad idea just let me know.

This is what I pulled up on baking101.com...
"in general, for best results, don't freeze the cake after decorating with frosting. The cake expands faster than the frosting, causing it to crack while thawing. also, freezing tends to dry out the icing. Sometimes the icing may fall from the cake once thawed, even a crumb-coating. The cake will be crusty and dry if this happens...but if you need to allow the frosting to firm up in the refrigerator or freezer, then wrap thightly in plasic before placing in the freezer. When you take the cake from the freezer to thaw, remove the plastic wrap and foil immediately, while the frosting is still hard, so you won't mar is surface. "
I have never froze a cake decorated before but this is what they said. Maybe someone else might have more advice to give on this topic..

Some people think that freezing a decorated cake is not as good as a fresh one. On the forum, I read that the colors bleed when thrawed.
Can you make the cake and freeze that and then thaw out and decorate a day or two before your mother leaves.
Freezing a cake actually helps make it even more moistier after it is thrawed still wrapped in foil.
I have frozen cakes before and they have been fine. My mom thought they were very moist and had a good flavor. I put them in cake boxes wrapped them in plastic wrap and then placed them in a trash bag. To thaw them leave them in the wrapping and set them out in room temperature to thaw for 12 hours. Then unwrap and they are ready to serve.

Thanks everyone for the tips. Not sure yet what I'll do. I'd like to try freezing a buttercream cake sometime just to see how it works out. Maybe I won't experiment on my brother (although it's tempting! I'm sure I need to get back at him for something in our childhood!).
