Chocolate Buttercream Question

Can I use melted semi-sweet bakers chocolate in any buttercream recipe to make it brown?? I also need it to crust so I can use the viva method. Will the chocolate affect that? There are many different recipes for chcolate buttercream but which ones are your favorites?

I don't remember where I found this...I just know it wasn't on CC. (I don't think!) icon_smile.gif It crusted very well, I made my best roses ever with this stuff icon_biggrin.gif) and everyone loved the taste.

Crusting chocolate buttercream

3/4 c shortening
3/4 c butter
1 1/4 c cocoa
1 1/2 tsp vanilla
2 lb powdered sugar
up to 1/2 c water (as much as you need to get your consistency)

I also added some butter flavoring to this (sorry didn't measure). I read here on the boards that it would cut the bitterness of the cocoa powder and it did! Beautifully! icon_biggrin.gif

Yes you can use melted semi-sweet bakers chocoalte in your buttercream. I know it will crust if you put meringue powder in your recipe with or without the melted chocolate. Use 3 ounces of bakers chocolate to every 3 cups of icing.
