Happy Thanksgiving everybody!

Okay, so I was up until 2:00 a.m. making a pumpkin cheesecake. Looked fine until I took it out and it's mushy in the middle. Clearly not done. I had to cook it at 425 for 15 min. Then at 275 for an hour. Then, I let it cool in the oven overnight. I have an oven themometer in my oven and it registers pretty accurate but my cakes always take longer than what the recipe says.

Any suggestions. I feel so discouraged. Any help is greatly appreciated.

My oven temp is off about 50 degrees, so I always have to adjust it. I bought a thermometer which hangs in the oven so I can tell if the temp is right or not. Even so, my cakes always take much longer than the recipe says. I never understood that. I don't even rely on recipes anymore, just trust my cake tester!
I don't know how to test a cheesecake though. Hmmm...
