I need to make about 60 fondant roses for a wedding cake, I need the cake ready by 21st December, can you tell me how much in advance I can make the roses, and will the fondant keep. Not sure if Im gonna be using fondant or flower paste yet.

They will last forever just make them now and keep them in a dark place and be careful not to break....I would be well on my way by now........gumpaste

flower paste will give u a much more realistic looking rose because u can roll it out much thinner than fondant.
It can be stored for months if u store it properly. It needs to be stored in a cool dark place, as light fades the colors, I store my flowers in a cardboard box, to keep the dust off, but to allow the flowers to "breathe" , in my panty. (top shelve of course, my toddler loves flowers icon_biggrin.gif )

I bought some ready made gumpaste and found it so hard to roll out, just seemed really tough. Ive ready I can make a quick version of it by using fondant icing and just adding gum tex is that right? I havent actually started making them yet simply because the woman has only just told me what colour she wants and plus Ive only just had the order too, this is my first wedding cake but its gonna be a pretty simple one once the roses are made.

u can make flowerpaste by adding 10ml of tylose/gumtex to 100g of sugar paste (fondant). If u still have some of the ready made gumpaste left u can try to a) microwave it for a few sec to see if it will be softer to work with or b ) work a little at a time by adding a few drops of water. That might soften it up as well.

with Crisco also. Rub some on your hands before working the gumpaste. I also mix the ready made with the fondant. I just roll mine thin with the edge of the rolling pin. Works fine.
