I am trying my first CT tommorow and I was wondering if anyone knows if you can add Wiltons black color paste to chocolate. If not what can I add to get black, does Americolor gel work?

Most of the gel pastes contain water, which will cause the chocolate to sieze. You need to use color specially for chocolate. You can sometimes use powdered color, but the results are not quite the same.

You could experiment with a small amount of chocolate and color to see if you can still use th chocolate. You can try adding some shortening to that mixture to help smooth the chocolate.

Don't put regular paste or gel into your chocolate, it will "sieze" up on you. You have to use an oil based coloring. Wilton and Chefmaster both make a "candy color" that is made to be used for coloring chocolate. You can also use colored cocoa butter, but it is more expensive and harder to find.
