I am so excited. This is my first big wedding cake. It is for this Saturday. There are no words that can explain this feeling that I have. I need to make a cake that feeds atleast 200 or more persons. She wants a square cake any suggestions or tips please send them.

I'm confused ... you're doing a wedding for this weekend and the design is NOT finalized with the bride yet? Do you have a contract?

Ya I am confused too, no design?? Well according to Wilton you could do a 16, 12,8 to feed 200 people. - keeping the 8" I am doing one in a couple weeks. Just decorated with swiss dots with a ruffle border around each layer. And fresh flowers on each tier? Or you could do scrolls, ribbon around the bottom of each layer?? Just go into the galleries and search I am sure you will find something. Good Luck

You must have already discussed the design w/the bride?
Do you have square pans? You should already be starting on the many details....like making icing & flowers NOW. Any colored icing being used should be made now. You can also start baking as you have to bake two of each size (that makes up each tier). And get the bottom board - all boards ready; gather together any pillars &/or plates to be used....things like that need to be done ASAP.
I suggest 14", 10" and 6" w/an 11x15x4 sheet extra OR add two 10" satellites.
Have you done a search here for sq wedding cakes to give you some ideas?

the bride kind of knows what she wants but keeps telling me she wants it simple. It is more or less last min cause her other cake decorator bailed on her last min. I do have the square pans. I just wasn't sure which ones i needed to use to feed that many people. I believe she just wants it white no color at all. Something very basic and simple is the understanding that i got from her. icon_redface.gif
