I have only done one kind of filling, other than the regular buttercream as filling (because I have been scared to leave my comfort zone! icon_redface.gif ). For my sister's baby shower cake, I took strawberry pie filling, and added a little bit of buttercream to it, and used it as a filling. I got raves. I haven't done a raspberry filling yet, but I have read were people have used seedless raspberry jam (with or without buttercream added to it) as a filling. I am excited to experiement more with fillings. thumbs_up.gif

Sorry, I forgot to add: the pie filling I used had whole strawberries in it. I took my food chopper and chopped the strawberries up and added them back to the 'syrup' before I added the buttercream. It worked great!

Gosh, I have tons of fun with fillings. Actually I have used more fillings than different cake recipies. I have made fresh strawberry filling, banana cream, coconut rum cream filling, chocolate ganache, cookies and cream, cherry, rasberry, triple berry, and cream cheese, caramel, and mocha. I have gotten most of my recipes from this site and I love them. HTH.

Mmmmm, Chauntelle, some of your fillings sound yummy! I'm curious to know how you make your banana cream, coconut rum and cookies and cream filling? If you don't mind...the only kinds of fillings I've used were BC, choc. mousse, raspberry mousse and strwaberry.

I honestly don't remember what the name of it was. I got it at the Wal-mart SuperCenter. I know that that doesn't help you. But they only had one brand, so that was what I bought. Sorry!!

Ray 75, under recipies here I just looked up fillings and it had a generic vanilla cream filling and I just played with it. I used the vanilla cream and cut up banana slices on it and then for the coconut rum I put lots of rum extract in the filling and then spreaded coconut all over it. For the cookies and cream it was just 3 cups of whipping cream and a pound or two of powdered sugar whipped and then crush a bag of oreo's and fold it in. My DH loooooved that one. He said it tasted like melted cookies and cream ice cream. I found that it tastes best in a brownie cake. The cream filling is nice too because I make a bunch and freeze it and then later on I can put what ever I want in it to fit the occasion. HTH.
