Fruit Cocktail Filling?

Help - I have someone who has requested a cake filling made with fruit cocktail. It's a new one on me. Anyone ever heard of this?

ewwww is my first reaction...but maybe mixed with buttercream it would not be bad???

When I was growing up, my mom made a tangy fruit dish where you cooked tapioca pudding with orange juice and then added drained fruit cocktail or other canned fruit. It would be thick enough to make a good cake filling. If anyone is interested, I'll see if I can find the recipe..............

I have an recipe for you, but you should try it before.
not everyone likes it.
1 mediun can of fruit cocktail
1 small box of vanilla pudding
1 small can of condense milk
2 tbsp of rum

mix the juice of the fruit cocktail with the rum then the condense milk.. prepare the pudding separate as directed and then mix it with the other mix and then pour the fruits into it and mix and chill for about an hour, once it's thick you can use it for filling. hope you like it.

Here's the recipe:

2 boxes Jello cook & serve tapioca pudding
1 envelope Knox gelatin
1 can fruit cocktail or other canned fruit
orange juice

Drain fruit, take the liquid and add orange juice to make 3 cups. Cook tapioca with the juice over medium heat, stirring frequently until clear white specks appear. Mix 1/4 cup water and Knox gelatin, set aside to bloom for 5 minutes. Add gelatin to pudding mixture and chill for 30 minutes or until partially set. Mix in fruit.

OK, wanted to give you all an update on this. I found out that it's actually a 'dip' of sorts although I'm not sure what you would eat it with. It's Fruit Cocktail, Vanilla Pudding and Cream Cheese. I'm going to make it just to see what it tastes like. Not sure if I want to put that in the middle of a cake. Sounds like it would be too soft. I seem to remember seeing this at a shower somewhere. Live and learn.

i use pastry pride...and fold in a can of drained fruit cocktail!!!!!
it is delicious!!!!!!! and is a great filling in the cake!!!!
