Csn anyone tell me if Rich's Bettercream has to be refrigerated or can it sit out like buttercream? I feel like such an idiot. icon_cry.gif I just got done making a cake for tomorrow and I can't get it into the fridge. icon_redface.gif

It is my understanding that it can be kept out. I've only used it once and that's what I did and it was fine. HTH

Rich's Bettercream is a commercial product. They sell it at Gordon Food Service store among other places. There is no recipe for it that I am aware of.

This is the first time using this so I was unsure.
Sad, I just read my original post and it seems I can't type tonight either icon_redface.gif . I'm having a wee bit of a panic attack.

The only place I know where to get it is Sams club. It comes in a 5 gal bucket and costs about $18.00 at our Sams.

RBC like most of the commercial whip toppings can be left out or refrigerated, however the temperature and humidity level will play a big part in your decision. In warmer weather or high humidity it is best to refrigerate. But when it is cool and/or dry left standing at room temperature is ok. If the customer will be picking up there cake early I would say it won't hurt, however you may want to advise them to place in a cool area like a refrigerator depending on the time of day they will be serving as well. Left out too long and it could develop a bad taste or start to melt.

Hi...I was reading the posts about this icing...and I buy alot of my icing from Sams club ...I looked on my bucket (its 28Lbs and it says WalMart Sams club White Spred-'N-Fill But-R-Creme)
I am wondering...is this the SAME Icing as mentioned that I quoted above?
also sometimes I buy my Red from Sams..and it comes in a smaller bucket... maybe that is the kind you all were talking about?
I was just curious!
