I have just received an order for a wedding cake that is a little different than what I am use to. She wants 4 cubed cakes. The first one is an 8x8x6 the other 3 are 6x6x6 I am trying to figure out how much each cake will serve so I can give her a price and make sure we have enough cake for the amount of people she thinks will show up. You know, it's bad enough that I have trouble pricing a regular wedding cake, here she has gone and thrown me for a big loop!!!

Yah, those sizes really make it different. I read another poster somewhere say that most cake cutters (especially caterers) *don't* make any change when they serve extra tall cakes. With that in mind I'd say the 6"er will serve 18 and the 8"er should yeild about 24-30.
Now if you have any way of telling the server how to cut the cake what I would suggest is putting one extra layer on a cakeboard the same size (OR slightly smaller) and tell them to take it off and serve seperately. Since it will only be 2" tall tell them to cut that layer into 2" cubes (2x2x2) while cutting the rest of the cake into 1x2x4 slices. Soooooo they should be 9 servings out to the one layer 6" sq along w/18 from the 6x6x4 part for a total of 27 from each 6" sq.

The bride was excited about having 3 layers in her cakes so I don't think the cardboard will work. She is thinking about 100 - 110 (she invited 150) people so maybe I need to chat with her about having all 8 in. cakes instead of 6. It wouldn't be a bad for me, I was going to have to buy 6 in. pans but I already have 2 8 in. ![]()
could the be cut in 1 x 1.5 x 6 slices? --- that's 9 sq in of cake vs. the traditional 1x2x4's 8 sq in.
in that case the 6x6s would each serve 24 (72 total for all 3)
and the 8x8 would serve 40 w/ a leftover piece 1/2 x 8x6 (mine?)
that'd be a total of 112 servings.

if you stick w/ traditional its:
18 for the 6x6 and 32 for the 8x8 for a total of 86 servings (3x18=54 + 32 = 86)
i'd go w/ the 112 and what is actually a slightly larger size (actually 12.5% more) and calculate price on that amount.
if you go by the more traditional 1x2 size, since it is 6" tall and not 4" -- in essence 50% more cake per serving, there should be a corresponding hike in the cost per serving.
