hi
I'm making some fruit cakes for christmas, but no one likes marzipan or almond paste. Can I just put royal icing straight on the cakes or do I need to ice with something else first...like fondant?
Also, can I use gel paste to colour the royal icing?

thankyou

Can you get away with just fondant or I believe it is called sugarpaste in the UK? Royal icing just doesn't seem desireable for eating, to me it is just hard as a rock and very sweet. I have colored royal with paste or gel colors, it does seem to thin it down a bit, but it doesn't separate.

You don't have to use marzipan but the cake can actually stain the icing brown. If you don't want to use marzipan I would recommend that you brush the cake with a good layer of boiling apricot jam and cover with fondant instead of using royal

The reason for the marzipan is to stop the staining so I have head of two layers of fondant......but many people pick of what they dont like anyhow. Goodluck
