For any tips, hints or advice on making Royal Icing for the first time. I am taking Wilton Course 2 and have to have Royal and Color Flow Icing for the class on Tuesday. I am a little nervous about it. Any suggestions would be greatly appreciated.

Just make sure all of your utensils, bowls, tips and bags are totally grease free. I've never had a problem using this advice. good luck!
I took the Wilton II course in August! I don't know that I have any tips...The course book was really helpful in giving directions--and like Crisseyann said:make sure not to have anything greasy when making the royal icing!
One thing I would suggest is to keep the icing and good flowers you make in each class for the final cake, that way you don't have to make a gazillion flowers for it!!!

Also after you make your flowers let them air dry overnite before putting them in a containter for carrying. They might get soft and melt if you don't and all the hard work will be for nothing.
I haven't had to make royal icing in a while. But, one thing my "cake buddy" learned (the HARD way)..make sure you have a GOOD mixer! She burned up 2 while she was in the Wilton Classes! ![]()
I also agree with keeping your flowers. My two friends and I took Course II together so we had LOTS of flowers. Luckily we kept them because we had 3 wedding showers and 3 weddings in a row at our church! All we had to do was open our little Rubbermaid Containers and VOILA! Instant decorations!
