I like to recommend putting in the fridge the day before it's needed and then taking out several hours ahead of time the day of.

Thaw on counter but leave the saran wrap on until completely thawed. It holds the condensation instead of going on to the box or cake.

Actually, I agree, I would take the wrapping off and put it in the fridge the day before and then out of the fridge for a couple of hours. I would be afraid the icing would stick to the wrap as it condenses...no?

I usually suggest leaving the box wrapped in the fridge - put in the fridge the day before and then take out an hour or so before you plan on eating it.

I don't wrap the actual cake. I usually put several layers of saran wrap around the box and then cover with heavy duty foil. but I do leave everything wrapped up during the thaw. icon_smile.gif

I froze a RED fondant covered cake (boxing glove in my photos). I did as you were thinking: put in box, wrap box really well with cling film (saran wrap) and put in freezer. the cake was put in the fridge the day before it was needed, still wrapped in the box and left to thaw in there for 24 hours (my hygiene class taught me that defrosting in the fridge is the safest way). Any condensation forms on the wrapping on the box and not on the cake. I had no runs on my red fondant and the cake was perfect.
