I have gotten into making gum paste flowers and love it!

Like everyone else I strugle with pricing them. I saw one web site that charged according to the ammount of slices. 1.00/slice. So if the cake served 100.00 then it would be 100.00 for the flowers. While this seems like an easy enough plan I'm not sure.

Do you make a list for yourself with the cost per flower and make a total each time or do you think this idea could work for a cake with "some" flowers on it. I'm not talking about 2-3 for a miminalist cake of 2 dz over the top kind. Just a regular cake with gum paste flowers.

I charge by the arrangement. If it a generally small or simple flower arrangement I use my pricing matrix and figure in my cost per hour ahead of time. If I make $10 an hour and the flowers will take 3 hours, I just add the $35.00 or so. Here's my matrix for home and hobby, based on Alice's if it helps (she didnt finish the gumpaste section anyway):

I charge according to the amount of flowers. I will estimate the amount to be used then charge accordingly. I charge $5 per full blown rose with leaves.

I have a list of each flower and what it costs (not for the customer to see, just me) and estimate what is needed and add it up each time. A rose is $9, calla $5, and regular lily $6, etc...

I would price flowers separately, cost per serving times number of servings plus $xx for flowers
