You know you could buy a plastic or latex Poinsettia at a place like Michaels, take it apart and use the petals as a mold for the melted chocolate, just brush the chocolate on the backs of the leaves, refrigerate till set and they should pop right off. Assemble on a plate with a piece of waxed or parchment paper with melted chocolate or candy melts (in the same color as the flower) the way the original flower looked, chill again till chocolate has set and carefully peel away from the paper and place on iced cake.
