I have an 11 x 15 rectangle 2 layers not torted. One layer is vanilla with chocolate chips and the other is chocolate with chocolate chips. I need a filling that will stand up to the heavy cake. I usually use chocolate ganache but I am afraid that it will just be soaked up by the cake. Any suggestions?????????? thanks.

ganache doesn't soak into the cake, it makes a great filling, my favorite

hope this helps

You can make a whipped chocolate ganache by letting your ganache cool and then whipping it with the beaters.

Your cake sounds awfully decadent, maybe a fruit filling like raspberry or strawberries would be nice.

I would do the almond custard filling recipe from this site or if you wanted to offset some of the richness and heavyness of the cakes, I would just do whipped cream.

I just made my nephew's birthday cake and it was chocolate with a cookies and cream filling. It seemed to make it not so rich. Or you could do a fruit filling like pastryjen said. I love chocolate and raspberry.

I'd use a chocolate-nutella mousse (like the one in the Whimsical Bakehouse book) or a whipped ganache. I'd also be careful to use a very stiff ring of icing to keep it from oozing. I don't know... I'd still be worried about the length of the cake (and the filling being too soft). I would probably pipe a stripe of stiff icing down the middle of the cake.

Good luck!
