the way i understand it is that unless you use farm-fresh the risks are low. i have been told that most eggs purchased in stores have been pasturized(???). but i've been told alot of things that turn out to be nothing more than someone blowing smoke up my @&&

I'm terrified of raw milk (unpasteurized), but for for some reason I love farm fresh eggs. I think they taster better and it seems that there is some truth to the thought that really fresh eggs seem to perform better in recipes.

Raw chicken...Yuk!

I use SMBC. I also learned in school that you need to wash everything that the egg touched and you touched after the touching the egg. I also learned the kitchen sink has more bacteria than your toilet does!

by heating your egg to 160-170 degrees I believe that kills any bacteria and essentially pasturizes the egg, doesn't it???

Yes, you would be correct that it cooks the egg and kills the bacteria. All food should be consumed at 140 degrees or higher. The Danger Zone for bacteria to form in between 40 and 140 degrees. I am pretty sure that most food consumed is never to temperature. Think about potluck meals that are sitting out. A bacteria's dream come true! The cold hard reality!

With this said....I eat all my meat rare, consume raw eggs and eat sushi.

Shaking my head here. I'd NEVER get anything done if I washed my hands after every egg. I don't fear eggs, raw meat or raw chicken. I have a healthy respect for proper handling.

Advertisers of anti-bacterial this and that have sure done their job. Who among us would want to be the cause of anyone getting sick?? But, in all reality being exposed to small amounts of bacteria actually make us stronger. Our bodies defenses are strengthed by being put into action by fighting little bugs.

I'm far from a slob.. I have been in the business way to long, I don't have to think about being clean, I just am. That being said, if eggs were that dangerous, do you really think we'd be able to consume them on any level?

The media is a powerful force. If one person in Dunkahooapoopoo gets sick on a "suspect" egg we hear about it all over the nation. Maybe they should do a report on the number of cakebatter sneakers, raw egg drinkin', muffin batter lickin, cookie dough scoopin' HEALTHY people there are!

I just had to pop in here to tell you guys that you inspired me to be a little less OCD about my eggs and I just made one and a half recipes of WASC (read a full DOZEN eggs!) and only washed my hands at the end!! icon_lol.gif

Of course the whole time I was cringing from the slime on my fingers and thinking of this thread and chanting in my head, "My name is Anya, and I'm a recovering OCD hand washer." lol

I dont know if I am ocd or not, well maybe I am .. but the egg thing really gets me .. I only EVER crack eggs open on one of my counters and they are cracked directly into a measuring glass and after I crack the egg I use my elbow to turn on the water and my forearm to pump the soap then I scrub like mad, get a hot soapy dishrag and wipe down every single counter, Im talking counters that are close to ten feet away from the cracked egg icon_confused.gif Then the clorox wipes come out and I wipe down every counter ... then its onto the next egg ... sigh ... I know in my lifetime I probably will never get anything from eggs even if I was not so anal about it .. but I just can't help it! Raw meat and chicken gross me out too .. but the eggs just do me in!

Holy cow! I had no idea so many people were so totally freaked out by eggs. I'm not one to be licking my fingers after handling them, but I, by no means, take super extra spectacular precautions after handling them. I wash like I wash for any other reason. I wipe up like I wipe up for any other reason. I rarely ever get sick. If there were traces of bacteria left floating around my house it probably made me MORE RESISTANT to getting sick. I rarely get ill and I think its because I live in fear of no germ. Okay, maybe bird flu.

If one person in Dunkahooapoopoo ---kansaslaura that one had me LOL !!! that made me think of places like okeefenokee swamp and one my daddy made up called zitti-bo-zatti--Thanks for the laugh

Not freaked out about the eggs or the meat, just mindful of how I handle them and not putting cooked stuff on the same platter the raw stuff came from.
I tend to agree that we are "too sanitized". We dont develop the proper immune systems and as a result are unable to fight off various diseases. I also think there are too many preservatives, pesticides, hormones and antibiotics used in our food marketing system; We are bombarded with rises in the incidences of ADD/ADHD, food allergies, obesity, resistance to antibiotics during illnesses and have you noticed how soon our girls are entering puberty and having their 1st periods? Used to be 12-14 years old, now I'm hearing (and know) more and more 9 & 10 year olds having their 1st periods!! A very sorry state of affairs to say the least....

I can't say that I am afraid of eggs. I don't wash my hands until I have finished with all of the eggs and then I thoroughly wash my hands and wipe my counters. I don't worry about the product because I know the eggs are going to be cooked. When I make IMBC, I use the pasturized egg whites in the carton. They work just as well.

In my kitchen you will never find a dishrag, sponge or a dishtowel. I can't stand them. I use paper towels for everything so I can wipe an area and throw it away. I scrub my sink with Soft Scrub and paper towels. Then I use the kitchen wipes by Clorox. Bleach kills everything LOL My mama tells me that I have a real problem but I am much more afraid of dishrags and sponges than I am of eggs. Okay I will call my counselor now LOL

I sanitize the counter after using raw eggs and wash my hands.

Handling raw meat sickens me!!!!! I like to eat meat, but if I had to kill my own meat, I would be a vegetarian!!!!!
