I am making a cake for tomorrow and with about 10 minutes left to bake it suddenly dawns on me....I forgot to add oil!!!! icon_cry.gificon_redface.gif

I have never done that before! It called for 1/4 C oil and I completely forgot to add it. How bad is it gonna be?? Will it be really dry or what???

It was for a 14" round and I only forgot to add the oil to one of the pans of batter. So in the grand scheme of things....is it going to be super noticeable, or do you think I can slide by on this one??? icon_redface.gif

Is it a doctored recipe with sour cream or any other moistener? That would help. People try to cut down the oil all the time. My guess is that it will be a little more dry than usual, but not so much you'd choke on it. I would use a wash on it, slather it with BC and move onto the next one!

If you are concerned that it might be dry, make a simple syrup and use your pastry brush and crumb coat the layer that doesn't have the oil, it will help to add some moisture to it.

When I first came to CC someone had a similar post and a number of people chimed in and said they leave out the oil all the time. Apparently cake mixes never used to have oil as an ingredient either.

So, after reading that I tried leaving out the oil and I LOVE the way the cakes turn out. They are not dry at all! I think they have a lighter fluffier texture without the oil. I've done it with plain cake mixes and doctored ones and they all turn out great.

If it's for a paid cake, I'd probably make a new one just to be on the safe side... You could always use the cake without oil maybe for cakeballs...

koolaidstains...Wow, I never realized that you could leave out the oil in a cake. I have put less oil in some but never have left it out all together, i thought it would make it really dry.

I shocked the ladies at my cake classes by saying I leave out the oil. icon_biggrin.gif Then several of them tried it, and most liked the cakes better without it...

No worries! You are still good to go! Your cake will be a little healthier, and taste just fine.

Luckily, this cake was for family...my sister's 30th bday...and I knew she would forgive me if it flopped! icon_redface.gif

I was so nervous to try it...but could NOT even tell a difference!!! You would never know I forgot the oil....who knew???

You can see it in my photos if you want. It's the two tier pink and white one.
