Question About Mousse Filling

Is it safe to leave mousse filling unrefridgerated? I am doing a half sheet cake covered in fondant, so once I cover it, I know I can't put it back in the fridge. I don't want to prepare a cake that will end up being a health risk.

Don't leave it out. I wouldn't take the chance.
I know there are two schools of thought regarding refrigerating fondant: do or don't.
I personally put fondant in the refrigerator all the time and have never had any issues with it. It gets very sweaty as it comes to room temp, but the condensation does eventually dry.

Mousse fillings are not safe to leave at room temp and they must be eaten within a 24-hour spand, according to our local food regulations - so I would not use mousse fillings for a cake left at room temp. It is too risky.

That said, I never had a problem putting fondant or MMF in the fridge.
