Okay, so I posted in the "how do I?" forum yesterday about doing a fruit filling between cake layers for the first time. I used a frozen strawberries, mashed, sugar, cornstarch, and a bit of water. After it thickened and cooled I put it in the fridge and when I was ready to use it about an hour later, It was perfect. So far, so good. I made the dam around the bottom layer as advised, and spread the filling as high as the dam, and placed the top layer, frosted, decorated.... Beautiful cake. Today, a relative picked up the cake for the party. (I did not attend, I'm coming down with a flu or something) My aunt just stopped over with a plate of leftovers, including a piece of the cake I made. The taste was better than I expected, but when cut the layers seperated from the filling! Not the worst that could have happened, but how do i avoid that in the future? It was a round cake and the slice was plated on its side. I've had cake served this way at weddings and all they layers stuck together... Like I would think they should... What could I have done differently?
