Can anyone remember where the post is for this? It was a while back but someone did say that you can doctor up a box mix to make yule logs.....is this true......if so, would you please help me out. I have made many the traditional scratch method but I sure would love to try a more efficient way if it doesn't alter the product too much. icon_biggrin.gif

I would like to know, also. I always make a sponge recipe for this cake, and I am a little tired of freezing egg whites.

Hey, I didn't know you could freeze egg whites. i have been throwing mine out. Can you freeze egg yolks too?

yep, freezing egg yolks is possible too.

Yes, you can. You must separate your whites from yolks. I freeze mine in ice cube trays, then double bag them in a zipper bag to keep them fresh, as they will have a lot of air in the bag.

I use 1 white or yolk per cavity. That way I can take out what I need the night before, and thaw them in a bowl in the refrigerator.

Good as new as soon as they are completely thawed.

Thanks for the tips!! Especially the icecube tray so I know how many I am using. When the egg whites thaw do they still whip up the same for meringe ect. or is it better to use them for white cake?
