I'm looking for any suggestions for a buttercream that isn't really sweet. I've used the Wilton mix, way too sweet. I've used the Wilton, ready to use decorator's buttercream in the can and it's not too bad, but I don't want to keep spending the money on that if I can make it for less. I like the how light and fluffy the Wilton whipped frosting is, but it's very hard to get smooth. I also would prefer one that doesn't have shortening in it. (don't like the taste!)

Thanks in advance!

Try the Buttercream Dream recipe from this site. It's my favorite!

I pretty strictly only use a meringue buttercream from Sylvia Weinstock's book Sweet Celebrations (but I sub 2 sticks of salted butter for 2 of the unsalted--too plain otherwise), or the Mousseline bc from Rose Levy Berenbaum's Cake Bible. Both are wonderfully creamy and not so sweet. I call them my "grownup" icing because kids prefer the sticky sweet stuff...

Try a partial recipe of one of them and see...they're awsome.

Does the meringue buttercream use egg whites or meringue powder?
Thanks!

Full recipe of Sylvia's uses 13 egg whites, or 7 for half a recipe (half makes 6 cups of icing). I think Rose's recipe uses 6 but can't recall.

No meringue powder in either.
