What Else Can I Do With Lemon Curd?

Aside from using lemon curd as a filling, what else can you do with it? I absolutely love the stuff and have a jar of it in my fridge. I'd like to find some use for it other than eating it by the spoonful out of the jar (and I don't have any cakes coming up where it would work for a filling).

Any suggestions? Thanks!

I know we have some really creative bakers around here...(I am obviously not one of them).

Slather it on scones (the Grandma Johnson's Scone recipe on allrecipes.com is awesome and easy).

Make hamentaschen (sp?) or another jam-filled cookie and use the curd.

Spread a thin layer on crepes and enjoy just like that, or also fill with a cheese filling for bright lemony blintzes.

What about lemon bars? Lemon meringue anything. Cheese Cake ... mmmm .. mmm .. Good.

I know you said you don't have any cakes comming up to use it but I was going to let you know... I add BC to my lemon curd it makes a sweet yet lemony and creamy filling. It is so good (to eat by the spoonfulicon_smile.gif.

My son uses it as a spread. Lightly spread on toast or on pancakes. I've tried it and it's not bad icon_biggrin.gif

my husband and I also love lemon curd (clearly the obvious choice in our vanilla lemon wedding cake - made by moi of course). we use it on crepes with fresh strawberries! The 5 star hotel here also serves it with french toast hmmmmmmmmmmmm.

that french toast sounds AMAZING!

How about lemon cream pie? I'm not sure if it will work, but you can always eat the evidence if it doesn't work out right... pie crust, lemon curd, then Dream Whip...(I LOVE DREAM WHIP!!!!)

my initial answer was 'fill a bathtub with it and jump in!'

i 'met' lemon curd in england....was considering moving there if i couldn't get it here in states....was thrilled to find it here!!!! now? i would like to experiment a diet that is based on the stuff....
I want to be the poster child to get lemon curd more publicity.....

okay,
my most significant use for it:
a lemon/rosemary cake with cream cheese icing and lemon curd filling....(warning, customers who try this wont' be willing to try anything else)

second:
gingerbread pancakes with lemon curd as a topping (drooling on keyboard)
(my initial reaction was 'eeewww!' but once i tried it????? i will never use syrup again!)

any interest, i'll share recipes...
gosh, i thougth i had more ideas....those two keep it off my shelf....if all else fails try biscuits/scones/toast

warning-i'm TERRIBLY chatty....the details aren't necessary, but here they are anyway...

we take Austin's (TX) American Statesman-every wednesday they have a Food section....the food editor USED to be fabulous....each week it was filled with varying degrees of recipes, and other food related fun....
there's a GREAT dessert bar (also a restaurant) that is just SUPER, complete with pianist, board games, coffee, etc....

anyhow, apparently the pastry chef or owner (someone) made a lemon rosemary cake for their son, it got such rave reviews that they eventually put it on the menu....the owner wouldn't share the recipe but would give the 'general idea.'
i remember it was the month before my birthday, on my top ten food items, 1 is lemon curd, 2 is rosemary and 3 is cream cheese icing, so i couldn't WAIT to try it.....but it sold for $45 or $6.95 a slice....and there was no way i was going to fall in love with a cake and then have to drive 60 minutes AND pay that much for a cake....i made my own birthday cake and it's truly my bread and butter on the sales side.....
i have since planted fresh rosemary at my home....

so here it goes:
use an Italian Cream Cake recipe, omit the pecans, the coconut and the
ADD 3 Tablespoons chopped FRESH rosemary (sometimes i get lazy and use only 2), 2 T. freshly squeezed lemon juice, and 1 1/2 T. fresh lemon zest.....

and here's my Big claim to fame:
i baked this cake for Alton Brown. the sweet man took one bite and kissed me. thought i'd run off with him (if he asked) until i remembered i was married, oh, and he is too.....

unintentional thread jacking.....

how i baked for alton brown is NOT too special....he comes to austin quite frequently....and he was doing a book signing for his baking/cookbook. he spoke for awhile and then stood around for ages signing books. that man is THE most genuine. he introduces himself (like we didn't know who he was!!!) and shakes hands with EVERYone who wanted....
i bake for people, it's what i do....so i took my lemon rosemary cake with me.....
i really wanted to back out, i got nervous, i felt ridiculous standing there with a cake box in hand. i shook his hand, introduced myself and sang I Knew You Were Coming So I Baked a Cake....which is hysterical because i do NOT sing....i pulled it out of the box and told him what it was. He immediately began asking questions (and i believe that since then i have gleaned from watching the shows that he isn't really fond of rosemary). he said he would taste it later....i gasped, it never crossed my mind that i would not be able to SEE him taste it. so i dug in (i had brought a fork) and he obliged (my hero!). he savored, tasted, and the next thing i knew i was being kissed.....
he said he hadn't had time toeat all day and that would be his dinner for the evening.....
when he signed my book he wrote, 'the only thing sweeter than your cake was your cheek!'
truly one of my Most Memorable Life Experiences....

still looking for the gingerbread pancake recipe.....
