do you know how many days i can have a carrot cake with cream chesse filling out of the refrigerator? i want to make that and then cover it in fondant for my dughter christianing but im afraid the filling can become bad. ![]()
Cream cheese may be considered safe out of the refrigerator, but it should be refrigerated for best results. Fondant can be refrigerated. There is some risk of condensation if you pull the cold cake out into a hot room. it will evaporate, and a small fan can help that.
if you use a crusting cream cheese buttercream, you're more likely to be safe than a non crusting cream cheese frosting. it really needs to be high in sugar/fat ratio to be safe. you'll also need a firm icing (not a soft non crusting one) to go under the fondant anyhow. i would suggest using satin ice fondant, it refrigerates great. better to be safe than sorry.
