Advice Needed.....please

Hi,

I am making a 1st birthday Monkey themed cake and smash cake for this weekend. My problem is the party is on Sunday and my husband and I are going away for the day and night on Saturday to celebrate our 6th anniversary sans baby. icon_smile.gif

My customer knows this and still wants me to make a cake and deliver it on Friday or early Saturday morning before I leave.

My question is will the cake still be fresh? I've never delivered early. Especially by 1 1/2 days. I am frosting with BC and having MMF figures. Can the figures be refrigerated since they will be fondant? I was under the impression fondant cannot be refrigerated.

Help!!!! I love everyone's advice here and I know you can help. icon_smile.gif

It should be fine.

I wouldn't refrigerate the cake unless it has a perishable filling.

A refrigerated cake should stay good for 3 or 4 days. Putting it in the fridge with fondant accents should be okay...I just would put a cake covered in fondant in the fridge!

the cake will be fine....as for the mmf, i would not refrigerate..just get them to store it in a cool place, like mabey the basememt.....

basement????? as i'm from florida too, i've never even seen a basement, i really wonder if anyone here has one-lol

as for the cake, pack everything for the trip early & finish & deliver the cake first thing saturday morning right before you leave, wrap it really well or use a cake taker (if possible) tell them to keep it very cool, but to me refrigerating mmf could be ifee (is that really a word-haha), good luck with the cake & have a great time icon_biggrin.gif

really??? nobody has a basement???? wow....ya learn something every day!!!lol!!!! i'm from bon accord ,alberta....we all have basements...i don't know how i'd survive without one!!!!

i won't say NO ONE but i've never seen one-haha--i live in north florida & no one i know has one---go figure icon_smile.gif

Lol I was amazed when I first moved to Florida and realized there were no basements here. Somehow I just thought everyone was supposed to have one!

quick question regarding putting the fondant covered cake in the fridge...when she takes it out to take to the customer, won't it start to "sweat" causing her fondant figurines to slide around, etc.? just wanting to know for future reference...

I guess it was way too early in the morning for my last post...it didn't make any sense! I was meant to say was it is okay to put a cake with fondant accents in the fridge...I do it all of the time, but DON'T put a cake covered in fondant in the fridge because the fondant might crack. You shouldn't have any problem with small accents though.
